Cheesecake Making Tips -
Chocolate Chips

Chocolate chips are readily available in dark, milk and white chocolate varieties. Chips fall into one of two categories: real or imitation. Most chocolate chips sold in stores today are not real chocolate. Their cocoa butter has been replaced with hydrogenated oil. The oil allows them to hold their shape in the oven. Chocolate chips should rarely be considered as a replacement for real chocolate called for in recipes.
